Tasting Notes
Welcome the new year with a blast of balsamic-glazed crispy seaweed on a platter of sea water-soaked hessian and driftwood. The nose matches the palate, enhanced by wintergreen and cranberry, followed by a dry finish. A tickle of water brings green apple and toffee on the nose, while the palate has an ultra-smooth mouthfeel, with hot tarmac and salted treacle before winding up round a barbecue grill. After five years in an ex-bourbon hogshead, we transferred this to a first fill American oak PX hogshead for the remainder of its maturation.
