Tasting Notes
The sweet aromas of lemon sponge cake, vanilla, as well as baked pears and apples sprinkled with coconut sugar, were met by a spiciness coming from ginger, turmeric and cardamom. A fizzy, fresh, fruity flavour provided us with a lip-tingling experience some compared to drinking a blend of Sicilian lemon juice with yuzu and spiced with botanicals. Following the addition of water, we had pancakes coated with a generous dusting of sugar and freshly squeezed lemon juice. On the palate it was refreshing, like a pineapple, and a sweet green apple and lime juice smoothie, while in the finish we found traditional Scottish tablet made using sugar and cream but with the addition of some stem ginger.
