Tasting Notes
Flexing our green leather driving gloves, we reached for our collection of old newspapers in the humidor before searching through shelves of sweet tobacco and single-estate dark chocolate. The palate centred around a baked orange, studded with cloves, pistachios, sweet cinnamon and nutty chocolates. The dram wholeheartedly embraced water, transforming into a honeycomb and butterscotch sauce, with swirls of apple purée, figs and tobacco on the nose. In a short finish, we savoured a glacé cherry and treacle-vanilla ice cream. After 14 years in an ex-bourbon hogshead, we transferred this to a second fill oloroso hogshead for the remainder of its maturation.
