Tasting Notes
The neat nose was sweet, fruity and easy; we found lots of notes of gorse flowers, vanilla pods, sandalwood, some peppery watercress and crushed hazelnut. Water brought out the green sharpness of granny smith apple, stem ginger, fruit pastilles and some earthy petrichor. The palate was a little drier than expected, with some soft oaky tones, pine nuts and crushed green herbs, as well as an elegant waxy and olive oil impression. Water revealed more subtle spices, dried flowers, yellow fruits, underripe melon, grassy olive oil and candied citrus peels.
