Tasting Notes
A refreshing cream soda, stirred with treacle, candyfloss and sun lotion, came served in a leather boot. The palate gave us crystallised honey, birch sap and a cask-aged treacle mead, accented with geraniums and malt loaf. The finish was dry and oaked at this stage. Water brought a beeswax aroma, with cigars and cedar following burnt sugar and golden meringue. The taste was a warming, spiced raspberry jam on madeira cake, with minted dark rum, a glass of IPA and a long, dry orange fondant finish. After 12 years in an ex-bourbon hogshead, we transferred this to a refill oloroso hogshead for the remainder of its maturation.
