What an aroma - herbal, salty seaweed at first, followed by smoked crab cakes and culminating in the sweet smells of frazzled bacon and caramelised sugar. The taste neat had a sweet and smoky intensity which was only manageable due to the perfect balance – challenging but well worth it for those who like that sort of thing! When we added water a billowing kiln smoke engulfed the room before we were making sweet and salty popcorn as well as spreading salted butter on burnt toast. On the palate we had just found our soul mate - we knew that this was meant for us.
