Tasting Notes
A very fresh aroma to begin, impressions of freshly folded woolen blankets, mountain air, rainy woodland, wet ferns and then freshly baked breads and pastries. Some herby scone mix, sandalwood, pebbles and chalk. A lovely balance of freshness and texture. With water we got bergamot, orange zest in black tea, aromatic green herbs, white stone fruits and toasted fennel seed. A nourishing note of crushed Brazil nut and lime curd too. The palate was savoury to begin, with white miso, brown bread and tobacco leaf. Then wood spices, vanilla cream. eucalyptus and lemon infused olive oil. Water brought more medical notes like cough drops, along with malt syrup and lemon barley water. A sense of old school shilling ales and sweet stout.
