Cask Intro
Scotland’s first public brewery was built in 1488, and 461 years later, distillery 28 was built on the site of that brewery, reintroducing drink production to a small village which once was home to three breweries. As a reformed brewer who grew up not too far from this distillery, I can’t help but identify with the journey distillery 28 has been on. Tasting Notes
The neat nose quivered with the savoury richness of freshly baked brown bread, plus rye spice, bitter cocoa, roasted chocolate malt and dark, spiced winter ales. We also noted big aromas of clove oil, mustard powder and freshly ground black pepper. Water brought resinous exotic hardwood notes, warm lathe shavings and the inside of a freshly made acoustic guitar. We also detected hints of furniture waxes, lamp oil and hessian. The neat palate was unashamedly big and dominated by wood spices, lot of vanillin, treacle cake, sweet black liquorice, salted caramel and earthy notes. Reduction brought coal soot, natural tar, dried bergamot, camphor and menthol balm, and strongly brewed fruit teas with big tannin and pink peppercorn. This was matured in a bourbon barrel for nine years before being transferred to a first fill American oak STR barrique with new toasted heads.
