Tasting Notes
Standing on the seaweedy harbour a big grubby smoke genie twisted our noses and sprinkled us with black pepper, dried chillies and iron filings. The palate continued themes of iodine sea air, seawater on bonfire embers, mineral and herbal notes, but the unexpected sweetness of nougat and chocolate limes brought tears of salvation to our stinging eyes. The reduced nose found us frolicking on the machair, aware of drying seaweed, wild flowers, herbs (singed rosemary) and hot shell sand and the invigorating salty tang of crashing waves. The palate – oysters with lemon vinaigrette, salt water taffy and liquorice and blackcurrant chews.
