Tasting Notes
Seduced by baked pineapple rings, hazelnut praline and key lime pie, we fell deep into a world of cinnamon sticks, orange oils and nutmeg. With one sip however, we were slapped by spice as ginger, chillies and cloves formed an orderly que at our tongue's expense. We reached for the water to recalibrate the senses to strawberry sweets, cherry cola and lavender alongside singed orange skin and red liquorice in an old fashioned cocktail. As if making up for lost time, the palate was now treated to black cherries and blackberries in a sweet crumble topped with pomegranate, roasted nuts and dates. After spending 5 years in a bourbon barrel this was transferred to a first fill Spanish oak oloroso hogshead.
