An overtly fruity nose at first agreed the panel. Lots of mango jam, fruit salad 'gunk', passion flower and some richer notes of hessian beneath. Also vanilla custard, green apple slices, fruit teas and citronella wax. Reduction brought out some cornflour and starched linens, but also buttered oatcakes, flower honey and olive oil cake. In the mouth we found a similarly fruit-forward arrival. Lots of pineapple rings in syrup, vanilla foam, young sauternes, red liquorice and turmeric. A playful sweetness that suggested maturity beyond its years. With water out came all the starches, waxes, pollens and peppery cereal tones. Then banana chips, kumquats and fennel with bit of sweet flapjack in the aftertaste.
