Tasting Notes

A beautifully complex and layered aroma at first, full of canvas, mineral oil, baking soda, leaven breads, turmeric and orange vitamin tablets fizzing in mineral water. Gets earthier with potting sheds, moss and petrichor. Then breakfast cereals topped with icing sugar and sweet fruit cordials. Luscious and wonderfully complex. With water we found a waxier edge, some aged Riesling, sandalwood, coal dust and high quality, grassy olive oil. Some bright herbal tones and hints of peach, kumquat and green apple. The palate opened with an old-school, textural oiliness. Emphatic, mouth-coating and riddled with herbal teas and dried exotic fruits. Reduction brought spices such as cloves and then things like lamp oil, hessian, chalky medicines and fennel seed. Magnificent!
