A fragrant combination of tamarind, galangal and star anise suggested a scene from Thailand with further aromas of cinnamon, lychees and crushed fresh mint. Thai basil and star anise then introduced a palate bound by wasabi and pink peppercorns before a deluge of sweetness merged vanilla custard and coconut with fruity quince jelly, lavender and oak. Water released an array of perfumes as jasmine and honeysuckle grew alongside lilies and elderflowers. Vanilla ice cream was served on sliced ripe apples but now with a tingle of lemon sherbet and tart orange skin. Finally, toasted almonds arrived on the finish with fresh cinnamon sticks and a lasting image of a lotus flower floating in jasmine tea.
