The nose neat was all over the place; sheep’s wool, beeswax, balsa wood, tomato plants, nettle tea and toasted almond slices. On the palate, however, we all enjoyed a funky rhubarb rum baba with roasted rhubarb and rhubarb cream with a bone dry, yet sweet and fresh eucalyptus finish. With some water, we took an axe and wandered into a forest on a hot autumn day to chop some wood. To taste the initial sweetness of dark chocolate marzipan and banana split faded into the dryness of wood shavings and cacao husk still with that sweet, fresh and citrusy, slightly gingery flavour of chewing on a piece of lemongrass.
