The pair of wooden stills in this distillery are famed for a heavy and oily distillate and we were not disappointed - glue glorious glue! Apart from glue we had an intriguing sugary, herbaceous aroma reminding some of aged rhum agricole from Martinique made with sugar cane juice. The palate is almost indescribable (in a very good way); buttered spiced red cabbage and distilled Turkish delight. Diluted, we had tomato consommé and white asparagus with mushrooms in brown butter and a glass of Monbazillac sweet wine with velvety flavours of honey and orange blossom. After 13 years in an ex-bourbon barrel we transferred this rum into a second fill French oak barrique.
