Tasting Notes
A sense of soft medical embrocations, seawater and pickled grapefruit emerged on the initial nose. We also found fermenting lemons, muddled mint leaves, metal polish and puffer smoke. Briny fishing harbours came to mind. Water brought out rather precise notes of cough medicine, bath salts and funkier, more farmyard touches like goat salami, cheese rinds and roast parsnip. The neat palate was extremely sharp and focussed on pure medicines and saltiness. Antiseptic, herbal mouthwash and gentian eau de vie. With reduction we found malt vinegar doused chips, pickled onion crisps, tarragon, iodine and capers in lemon juice.
