Tasting Notes
We imagined poaching pears in a red wine sauce as well as preparing a cranberry, orange and Port reduction enjoyed over turkey or with cheese. Silky smooth on the neat palate, like hoisin and plum-glazed ham to start but then followed by nutty buttery spiced apples on toast. After we added a drop of water, we poured ourselves either a heather ale or a glass of Amontillado Sherry with those typical flavours of orange peel, dried apricots, vanilla, honey, hints of marzipan as well as almonds and toasted hazelnuts. Following eleven years in an ex-bourbon hogshead, we transferred this whisky into a 1st fill American oak PX hogshead.
