An enticingly coastal start welcomed us with rock pools, beach bonfire ash and salty sea air before heavier aromas of tarry ropes, liquorice cough syrup and blackened engine grease arrived. The palate was chewy and sticky with burnt toffee, sweet icing and manuka honey while roasted peanuts and cereals rattled in a coal scuttle. Adding water released thick plumes of industrial smoke from ancient steam engines in the harbour and linseed oil trickled over lavender, nut husks and honey glazed ham. On the palate came thick coal dust, creosote, and tar along with the sweetness of toffee and icing, now with citrus notes and wood char.
