Tasting Notes
At first nosing we detected orange peel, marzipan and mature oloroso notes – very classical sherry influences on display, we thought. These were followed swiftly by pickled balsamic onions, orange oils, lime zest and marmalade with coriander seed. Reduction brought out butterscotch, gorse flower, green mango and assorted fruit salad 'juicy dregs'. Some impressions of mixed sweeties were also detected. The neat palate opened with whipped cream, blackcurrant jam, buttered scone and toffee sauce. Water revealed stem ginger in syrup, plum skin, maple syrup and classical old fashioned cocktail notes with drying wood spices. This was matured in an ex-bourbon hogshead for 12 years before being transferred to a second fill oloroso hogshead.
