Tasting Notes

A sooty and grubbier than usual example we felt. Initial notes of sooty coal scuttles and puffer smoke were detected. Then oily coastal aspects, BBQ coals, distant peat smoke, crushed beach pebbles, sand and tarry rope. With water it became more aromatic and complex, with bandages, smoked sea salt, caraway, lemon rinds and charred pineapple. The neat palate showed a beautifully soft, heather peat smoke. Salted white fish, putty, crisp frying bacon and smoked olive oil. Water brought out briny pickling juices, dried herbs, smoked teas, crushed chalky medicines and peppery miso. At 9 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks. Single malt originally from bourbon hogsheads was married further in this 1st fill bourbon barrel.
