After 13 years in a first-fill Moscatel hogshead, we transferred this into heavy char, new oak, creating a bold, breath-taking dram. The nose is a heavyweight wrestling match between Ricky Raisin (fruit cake, Black Forest gateau, baked banana) and Oaky Joker (charred staves, rolling tobacco, pink peppercorns, ginger, leather). The referee is a sweet guy called Caramelo Demerara. In round two (the palate), the action gets even more intense; Ricky produces skilful rum and raisin fudge, cherry pipe tobacco and prune moves, while O J delivers a body slam of gingerbread, liquorice, pepper and chilli. The referee holds it together with toffee, treacle and salted caramel.
