The colour, a wonderful dark reddish hue, and the aroma reminded us of watching a squirrel hastily scamper around hoarding nuts in a damp evergreen forest before the winter sets in. The palate was intense and bursting with rich flavours like a nutty and fatty Iberico ham thinly sliced from a free-range black pig shoulder. Diluted, we got toasted hazelnuts and acorns, candied orange peel, crystallised ginger and plum chutney on the nose, while the taste still had a spicy vibe with tree bark, lemon, figs and prunes. In 2018 we combined selected oloroso butts before returning the single malt to a variety of different casks to develop further. This is one of those casks.
