Tasting Notes
The initial nose was straight and direct, all on rock salt, watermelon and olive oil. Behind that came a wonderful coastal freshness, with notes of lemon rind in green tea, dried herbs, beach foam and gentle but firm heather peat smoke. Water brought out heather ale, ginger wine, cedar wood and lightly smoked herbal teas, plus bandages, olive oil and gorse flower. The neat palate exploded with a totally gorgeous heathery peat smoke, alongside pink grapefruit and crystallised exotic fruits; the screamingly old-style smoke enduring. With reduction we found salt and pepper crisps and wonderful flavours of crystallised honey, waxed lemon and herbal liqueurs. This was tangy, salty, citric and sweet, with a quilt of old-style, beautiful Orcadian peat smoke draped over everything. At seven years of age we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
