Tasting Notes
We were impressed by the sense of textural concentration this one emitted from the start. The feeling of spiced honey, new leather shoes, pressed wildflowers and earthy tropical greenhouses. Beyond that: shoe polish, sun cream and expensive olive oil with a splash of lychee cordial. Superb! Reduction brought us dusty workshops, aniseed pastis, sticky fruit chutneys and pollen-heavy exotic flowers. The mouth initially showed many shades of honey along with thick notes of hessian, toasted wood spices, dried mint, wee sooty notes and a spicy waxiness. With water we found vanilla milkshake thickened with oats, plum wine, toffee apple, aged calvados, treacle sponge and mulled cider.
