Immediately massive and 'in yer face'! The panel swiftly noted such things as floor cleaner, hospital corridors, industrial fishing wellies, seawater, engine grease, posh caviar, hot steel wool and malt vinegar mixed with aniseed distillate. Mental stuff! With water we got pin-sharp medicines, oily sheep wool, gentian eau de vie, German rauchbier and cask strength Mezcal. The neat palate was like a descending fog of pure peat smoke. We were lost in a kiln, stumbling about between curls of blue peat smoke. Add to that olive tapenade, smoked olive oil and dirty martini juices. Reduction brought cask char bobbing in smoked limoncello, camphor, tar buckets, roof pitch, brine and burning fir wood.
