A superbly satisfying mix of peat and sherry influence we thought. Initial impressions included green peppercorns in brine, anchovy paste, seawater, malt vinegar on chips, squid ink, pork scratchings dusted with paprika and smoked teas. Water brought out more marine, coastal elements such as beach foam, wet rocks and kippers drizzled with smoked olive oil. The neat palate was superbly tarry at first. Deep smokiness, umami, leathery saltiness with game meats, driftwood and smoked chilli oil. Water brought aniseed distillate, smoked fennel, spicy pork broth, hessians and pickled walnuts. Matured for 6 years in a bourbon hogshead before transfer to a 2nd fill oloroso sherry hogshead.
