Sherry Week
International Sherry Week celebrates all things sherry. But what does that have to do with whisky? Our very first bottling in 1983 was a whisky matured in a sherry cask from distillery 1. Today, we continue to celebrate sherry and whisky through our sherry cask maturation programme. Enjoy these casks as part of the world’s largest ‘salud!’ to everything sherry.

Tasting Notes
It opened dark and weightless, like drifting through an engine bay lined with light grease, dark chocolate, black forest gâteau and chocolate mousse. Fruits of the forest and linseed putty then collided with old leather sofas, while wood glue, prunes, ginger wine and dried lime delivered an otherworldly medicinal experience. On the palate, dark rum, herbal toothpaste and brine became trapped in a cherry cough syrup black hole alongside aniseed balls, cloves and loose-leaf black tea. Water shifted the orbit towards salted liquorice, mulled rum and a plethora of wax crayons beside a wood-burning stove. Honeycomb vaporised into orange sweets, ginger herbal tea and whisky cocktails on the finish, with a lingering space dust of coconut, pear and mango. After spending 17 years in an ex-bourbon hogshead this was transferred to a second fill Spanish oak PX hogshead for the remainder of its maturation.
