Wrap up on the longest night of the year with this intense dram, full of sweet notes ranging from freshly made caffè d’orzo (Italian barley coffee) sweetened with caramel to fudge and heather honey, and then finally a lemon cake mix. On the palate we bit into a gala apple in a carpenter’s workshop before we had rum and brown sugar-broiled grapefruit. With water the sweet notes prevailed, with marshmallows, peanut butter crumble, chocolate-covered almonds and doughnuts with an apricot filling. The taste followed suit – toffee apples, breakfast with oats, dried pineapple pieces and honey. In the finish we tucked into a soft, spongy, sweet meringue and vanilla cream cake.
