Tasting Notes
A firm and assertive nose, we thought, with immediate notes of pollen-heavy lilies, hessian cloth, wintergreen, putty and sandalwood, plus bouillon stock with bay leaf and a nourishing waft of freshly baked pastries and breads. With water we found furniture oils, pine cones, sunflower seeds and trampled clover. There were also more feelings of pastries, such as warm buttery croissants. The palate was similarly firm and rich, but also displayed a superbly enchanting sweetness: lots of sugary darjeeling tea and buttered soda bread drizzled with honey, then touches of molten chocolate orange, new world IPA and a hint of juniper. Reduction brought spiced vanilla crème brûlée, lemon cordial, pistachio ice cream and sharper tones of aniseed and cough lozenges. A big, hearty and fascinating dram.
