Tasting Notes

Raspberry coulis, flowers from the meadow. According to all sources, tropical gel on the nose. Sherbet fountain, mace and fig roll, around the mouth and then ... pop in a pipette of water. It’s going to start raining fruit! It’s raining fruit! No, seriously – pineappleade, brioche, tinned lychee, apple glazed with butterscotch and banana fritters in syrup all showed on the reduced nose. The palate was strewn with satsuma, fruit salad, pink grapefruit, chilli, apples, pears, juicy fruits, chewing gum and clean aged white wine, all building to a warm finish. Hallelujah! The starting point for this small batch was two bourbon barrels of single malt Scotch whisky. One cask was transferred at 10 years old to a PX-seasoned STR barrique while the other remained in bourbon. The casks were then married together before bottling.
