Tasting Notes
A lighter style of sherry we thought; full of soft aromatic tobaccos, cocoa, light earthiness and mossy tree bark. This was very attractive and elegant, the Panel agreed. Water ushered in cinnamon powder, pumpkinseed oil and salted almonds with a hint of marzipan. The neat palate opened with orange oils, heather honey, dried flowers and camphor. Then we got liquorice, both red and black varieties, followed by a heightening and punchy wood spice note. Water brought forth juicy berry fruits, jams and lovely rich notes of game meat. In the aftertaste were some superb notes of green walnut liqueur. This was matured in a bourbon hogshead for eight years before being transferred to a first fill American oak oloroso sherry hogshead.
