Tasting Notes
On a stroll towards the beachfront sauna, tar-soaked hessian unwound to let loose jelly babies and coal, pineapple chunks and smoked wheat beer. The palate, zingy with orange soda and lavender honey, was underpinned by a deep leather backbone. Water added floral peat notes to the nose, with cloudy lemonade and a rosemary-seasoned first aid kit provisioned outside the sauna. The palate finished with birch water, pine resin and smoked clementines on beeswax. After 17 years in an ex-bourbon hogshead, we transferred this to a first fill ex-bodega PX barrique for the remainder of its maturation.
