The initial nose suggested chalky Edinburgh rock, powder puffs, iced gems and milk ice lollies. We also noted freshly laundered linens, lemon meringue pie and white pepper. Reduction revealed creme anglais, fresh oak and toasted coconut with a subtle floral. The palate when neat displayed a fatty richness of whipped butter, then spicier notes of star anise and brown cooking apples caramelising with brown sugar. Water brought lots of lovely notes of lemon sherbet, pineapple chunks, heather ales, miso paste and butter mints.
