Tasting Notes
The neat nose on this one was immediately full of peat-infused pink antiseptic ointment, raw kiln smoke, buckets of hot tar, seawater laced with tabasco pepper sauce and a terrific sense of fatness! Water revealed a more precise, briny, ashy and crystalline profile, along with a fair few tufts of oily sheep's wool. The palate when neat showed no signs of messing about, delivering peaty potency with whip-smart coastal precision. We noted lemon juice on shucked oysters, tarragon pickled in malt vinegar and thick wafts of bonfire smoke. Reduction gave us a wonderfully taut mineral profile, as smoked sea salt and beach pebbles led the charge. Mixed citrus juices, fragrant mineral salts and dried kelp then added a touch of elegance.
