The Panel found a wonderfully oceanic aroma, full of sea breezes, crushed seashells, chalky medicines, coal scuttles and zingy citrus piths. This gave way over time to petrol puddles in a forecourt, wet bracken and a puff of tarry smoke. Reduction brought dried tarragon, anchovy paste, turmeric and smoked olives in pickling juices. The neat palate was massively assertive and powerful. Lots of natural tar extracts, anthracite, TCP, iodine drops and smoked white fish in skinky broths. With reduction we got dried marjoram, wood embers, squid ink, weighty smokiness, seawater, jangling minerals and hot smoked salmon. At eight years of age, we combined selected hogsheads from the same distillery before splitting them into a variety of different casks. This first fill bourbon barrel is one of those casks.
