Tasting Notes

At eight years of age, we combined selected casks from this distillery. The single malt was then put into various casks to develop further. This is one of those casks. The nose suggested smoke-impregnated wood (kilns, pagoda chimneys) with toffee and cinnamon toast sweetness. That sweetness suffused the palate with candy floss, fudge and "eating sticky toffee pudding off a charred stave". The reduced nose found heather honey and burnt fruit cake – and some maritime notes appeared – rockpools and the Stromness lobster ponds. The palate now combined toasted barley, sherbet straws and lavender honey with wood ash, cooked crab and smoke.
