Tasting Notes
The initial aroma was intensely fruity and tropical, lots of pineapple caramelising in brown sugar, chewy strawberry sweets and Iced Gems. Beyond that some more punchy notes like hessian sack, blood orange and old furniture polish. Water brings out overripe mango, vanilla custard, strawberry tarts, raspberry fudge and stem ginger in syrup. The palate when neat if soft and milky initially, lots of apricot yoghurt, milk chocolate and dried mango chunks. Water shifts things kind of left field with lemongrass, bay leaf, putty and linseed oil. Bison grass, apple juice and some wonderfully textural fruit salad juices. Matured in a bourbon hogshead for ten years before being transferred to a first fill ex-rye whiskey hogshead.
