Tasting Notes
The initial nose transported us to a sun-drenched orchard in springtime. We found creamy green apples and the fresh scent of spring shoots, wrapped in waxy bramley peel. Then a richer layer unfolded: yellow melon rind, almond sponge and a hint of yellow chartreuse. On the palate, a surprising white pepper spice delivered a lively mouthfeel. This quickly softened into a luxurious vanilla cream, white chocolate and candied lemon, reminiscent of a sugared, coconutty tea biscuit. Adding a drop of water the nose flourished, revealing juicy green grapes, honeysuckle and the savoury richness of beurre blanc and teacakes. The palate retained its waxy texture, and the spice held on; the dry finish giving us a final bite of bitter orange zest and black tea.
