Salted caramel, honey on a charred wooden spoon, sultanas, fig rolls, prunes, blackberry banana smoothie and chunky chips with brown sauce, a truly whacky kaleidoscope of aromas. Thick, sherry-like notes of prunes on the palate before a juicy beef Wellington with a grippy tannic red wine sauce appeared. Water added cherries dipped in dark chocolate, black wine gums, plums and blueberry pie while the now smooth tannins balanced the sweetness of sticky toffee pudding and the syrupy texture of a ‘liquid cherry Bakewell tart’. After four years in an ex-bourbon hogshead we transferred this whisky into a second fill charred wine barrique.
