An initial wealth of singed raisins, fruit loaf, rye bread, cocoa, bitter chocolate and boozy Irish coffee. Sumptuous, generous and richly sherried. A wonderful leathery, salty old Oloroso funk hanging about the nose. With water we found softer milk chocolate notes with black truffle, cherries in brandy and praline. The initial palate was once again on this wonderfully leathery, salty and umami sherry vibe. Richly earthy, espresso martini, green walnut liqueur and rancio with the impression of old library books. Reduction brought bramble jam and cassis, then rum n raisin ice cream, coffee liqueur, aniseed, cloves and star anise. Dark chocolate with chilli flakes and salted caramel. Wonderful! Matured for 10 years in a bourbon hogshead before transfer to a 1st fill oloroso sherry hogshead.
