Tasting Notes
A soft cloud from the ocean drifted across our noses, as we discovered peppered mackerel and crab salad with rock samphire served on the machair – all combined with pear, jelly baby and marshmallow sweetness. Lively as a caffeinated squirrel, the palate entertained us with a performance of orange zest, pears and dried pineapple, plum skins, pepper and extra strong mints – with, yet again, that balancing sweetness, this time with a chunk of waxy honeycomb. In reduction, the nose acquired saltwater taffy and dried seaweed, watermelon and honeysuckle. The palate produced malted bedtime drink, salted caramel, spun sugar and peanut brittle.
