We were delighted by that familiar profile of waxy bubble gum, lemon barley water and sandalwood that so often accompanies these casks from this great Highland distillery. It continued with crushed seashells, umami ramen broth, canvass and linseed oil. Reduction brought aromatic notes of vase water, pollens, heather flowers, cheesecloth and crushed oatcakes. When neat, the palate had a light oiliness, with runny honey, sharp minerals, beach pebbles, white flowers and cut grass. Water brought a sweeter side with posh custard, candied cereals, olive oil and citrus-tinged waxes.
