We imagined wearing a brand-new Barbour wax jacket on a sunny but cool autumn day as we sat outside drinking ginger wine and plum liqueur. The taste had that rich prune-like flavour with gentle almond notes as well as the sweetness of Tia Maria truffles topped with a chocolate coffee bean. Following reduction, we were daydreaming of being Canadian lumberjacks who not only cut down trees with axes and saws but also plant new seedlings. After all this hard work we drank a concoction made with Jägermeister, lemonade, iced tea and fresh blueberries. Following ten years in an ex-bourbon hogshead, we transferred this whisky into a 2nd fill charred red wine barrique.
