The waxy fragrance of scented candles formed around cinder toffee and limoncello as oranges, coconut and marzipan settled onto sawdust and polished oak. The palate however greeted us with a burst of mango, melon and peach covered in thick cream while clove and aniseed joined flambeed banana and papaya with a squeeze of lime. Adding water brought us another tropical wave, now combining passionfruit, guava and kiwi with sultanas, lychees and lemon meringue pie. The palate was clean and crisp with grapefruit and orange zest but also rye spices, almond biscuits and a grape-like finish of chablis white wine.
