This one needed a bit of time but “you have to work at it to get it,” like cracking open unsalted roasted monkey nuts or shelling pistachios. On the palate at first, intense sweet pineapple chunks followed by apricot elderflower jam made with St. Germain liqueur before a fruity spiciness set in like a mango ‘con chile y lemon’- a spicy Mexican style prepared mango. After reduction we were back with the nuts but this time a creamy maple nut cake next to a fruit of the forest yoghurt while to taste mint chocolate chip ice cream and choc-kissed hazelnut marshmallows.
