Tasting Notes
Initially, the nose revealed its Tennessee influence: sweet vanilla, spicy leather and oaty milk chocolate biscuits. Cola, oak and cinnamon then joined hay bales, wooden panels, dried raspberries, ripe pears, stone fruits and apricot jam. The palate delivered more cola, menthol and oak barrel shavings, evolving into raspberry gummy sweets and stone-fruit jams. A spicy astringency gave us oat biscuits, hazelnut and dried apricot, followed by honey, vanilla custard and a mineral sweetness, plus peaches, oolong tea and pink peppercorns. Reduced, the nose suggested spicy oranges and spearmint gum, then notes of an old wooden barn. The palate became sweeter, gifting the Panellists chocolate-covered peanuts, peanut brittle and a dry oakiness before concluding with hazelnuts, dried figs, rye, lemon, sweet pastry and more woody spice.
