We imagined a stack of Scotch pancakes drizzled with runny honey and then topped with crunchy nuts and slices of chopped banana. On the palate, the nuts were honey roasted as we also found carrots roasted in a pine-cone syrup and rich, dark, plum chocolate. Adding water turned things a lot fresher and more herbal, with basil and oregano next to dried tobacco leaves. The taste was that of an espresso with dark chocolate cherry brownies or ginger snaps while, in the finish, it was more like a ginger mint tea. Following eight years in an ex-bourbon hogshead, we transferred this whisky into a first fill American oak PX hogshead.
