Tasting Notes
Walking through a freshly mown field on a warm summer evening, our noses grazed on pineapple and pear, vanilla and perfume. To taste, though, we dined on nutmeg-infused peach syrup, tangerine zest atop crispy bacon, and sweet cinnamon. Water pulled forward the pear on the nose, while mixing clove into vanilla custard. Water's influence on the palate was to darken and to dry, giving liquorice and cinnamon icing, a splash of grappa and a decorative mint.
