Tasting Notes

The initial nose is all barber soap and freshly chopped herbs such as parsley and chives muddled up on a sandalwood chopping board. Add to that some hints of new leather shoes, hand lotion, sunflower oil and yellow meadow flowers. Reduction offers up white mushrooms, heather flowers, breakfast cereals, gorse bushes, toasted pine nuts, horseradish and gun metal. The arrival in the mouth is green and prickling with white pepper. Stone fruits, rose petals, gooseberry chutney and candied pineapple slices. With water we get digestive sweetness, milky cocoa, peach stones, dried apricot chunks drizzled with condensed milk and bashed Oreo cookies.
