Mighty oak and massive smoke! Have you ever creosoted a fence on a warm summer evening while the barbeque was just about ready with a layer of white ash over a bed of glowing red coals? We grilled honey glazed prawns, smoked bacon and jerk chicken in a Caribbean red pepper sauce. After the addition of water smoked vanilla pods, caramel, malt loaf and Jamaica cake appeared before tar-dipped barley sugars and cold-smoked lemons took centre stage. On the palate, the smoke was now very well balanced with the sweetness of dark banana bread and glace cherries. Just before its 1st birthday, this whisky was transferred from a charred new oak barrel into a refill ex-bourbon barrel.
